The cornerstone of Corporación Oleícola Jalón Moncayo, since its creation, has been the work developed to obtain an olive oil capable of reflecting the essence of this region with such an important olive oil tradition.
The olive groves of Aragon, sheltered by the Pyrenees and the Iberian System, stretch out in a singular landscape, home of our extra virgin olive oil cellar.
During the dry summers typical of this area, olive trees receive intense sunlight, responsible, together with the scarce rainfall and strong winds, for obtaining olives that grow slowly, calmly, taking their time to absorb from the earth, with no need of water, the minerals they need to enhance their taste, body and aroma.
Nature, through olive trees, offers a fruit that, after a careful selection, is taken to our cellar, where it is processed and where olive oil is extracted. This process is carried out with exceptional care so as to not alter its organoleptic qualities. Our olive oil has a characteristic aroma, body and taste. Its touch of almond, well-balanced aroma and dense body stay in mouth, as a result of the hundreds of years these olive trees have been grown, slowly and uninterruptedly, in traditional olive farms… Nature establishes the rhythm needed to obtain a high quality extra virgin olive oil.
